727b208422 Revert "winpthreads-stub: Add package to be link without pthreads library (#24413)" 
This reverts commit 7217dc8045.

Turns out this gets pulled in now instead of winpthreads, because our main package is called winpthreads-git and the in case of multiple provides one of them wins.

So we'll have to revert this, and remove the "-git" prefix from the main package if we want this to work.

* ngtcp2: build with openssl support

this is possible with openssl 3.5+ and newer ngtcp2 versions

* curl: build openssl variant with ngtcp2 backend

FindNGTCP2 pkg-config logic was passing a wrong module name to pkg-config
and not setting the libraries correctly; try to fix that

* nghttp3: restore for mingw32

required by curl now

* use upstream fix

830a57c280 curl: only replace wcurl via the main package 
turns out pacman doesn't handle multiple replaces nicely as it tries
to replace it with all three packages at once, which then fails
due to the confclits between them.

Replace with the main package only instead, which should cover the
default setup at least.
