Fix client-overrides not getting extracted (#1120 )

Closes #1112

According to the [docs](https://support.modrinth.com/en/articles/8802351-modrinth-modpack-format-mrpack#h_3ad1b429f0), it needs to be `client-overrides`, not `client_overrides`. This PR fixes this typo.
